Sherman's Travel Magazine - Trendspotting: Cocktail Confidential

In recent years, a small group of innovative bartenders has risen to the top shelf of cocktail culture. Working at stylish new bars - places without neon or velvet ropes, where connoisseurship replaces trendiness - they can be found crafting drinks that are equal parts heady libation and epicurean delight. On the following pages, meet fi ve experts who have elevated the cocktail to an art form, and in the process reinvented the way we drink.

Lucy Brennan, Mixologist
Mint and 820, Portland, Oregon

Raising the Bar: A student of the classics (and by that we mean pre-Prohibition cocktails like the Tom Collins), Brennan searches for inspiration in vintage bartending books. Her updates include the Hot & Sour, a Whiskey Sour fired up with a spicy kiss of Tabasco. Star Turn: Brennan's unconventional use of produce (her signature drink is the Avocado Daiquiri) has put her on more than a few top bartender lists (Food & Wine, Bon Appétit, Playboy.com) and she recently released her first book, Hip Sips (Chronicle). Forewarned is Forearmed: Reservations are not required at the starkly lit, brick-walled 820 (adjacent to her restaurant, Mint), but expect a wait, as it's still the standard-bearer for Portland's cocktail renaissance. Take Away: "A cocktail should be balanced and complex but only have four or five ingredients," she says. She recommends experimenting with fruits or herbs.

SakeOne is proud to announce premium saketini recipes developed by nationally acclaimed mixologist Lucy Brennan owner of Portland, Oregon's Mint restaurant and 820 cocktail bar. Like sake itself, saketinis are about balance; perfect proportions that create pure joy for the palate. These recipes have been carefully crafted to pair well with food and stand alone as refreshingly distinct and pleasurable elixirs. Taste what occurs when the best mixologists and the finest sake come together.

SakeOne was founded by a group of folks who simply loved sake and had a vision - to produce world-class sake in the United States. Although sake was traditionally made in Japan, they believed that premium ginjo sake could be produced in the United States. With water as one of sake's most critical ingredients, the east slope of Oregon's Coastal Mountains was identified as an ideal water source for its purity. And so Forest Grove, Oregon, became the home of SakeOne, producer of Momokawa and Moonstone, America's most honored sakes!
